Method

Riscaldare il forno statico a 130°C. Preparare una teglia grande con acqua calda e adagiarvi 6 ramequin di ceramica.

In una ciotola, mescolare i 4 tuorli con le proteine in polvere vaniglia e un pizzico di sale fino a ottenere una miscela omogenea.

In un pentolino, scaldare il latte scremato con la stecca di vaniglia a 75°C circa (senza farlo bollire); togliere la vaniglia.

Aggiungere il mascarpone light al latte tiepido e frullare con un frullatore a immersione finché non è completamente sciolto e cremoso.

Versare il composto di latte e mascarpone nei tuorli, mescolando delicatamente con una spatola fino a incorporare completamente.

Ripartire il cremoso tra i 6 ramequin; coprire leggermente con carta stagnola.

Cuocere a bagno maria per 30-35 minuti, finché i bordi sono leggermente assestati ma il centro rimane morbido al tatto.

Estrarre dal forno e lasciar raffreddare a temperatura ambiente, poi riposare in frigorifero per almeno 4 ore.

Prima di servire, cospargere un cucchiaio di zucchero di canna sulla superficie; caramellare con il cannello fino a formare una crosta croccante.
