In una ciotola, sbatti le 2 uova intere fino a ottenere un composto omogeneo.

Aggiungi il latte scremato e mescola bene.

In un'altra ciotola, unisci la farina integrale, le proteine in polvere, il cacao amaro, la stevia e il sale.

Versa il composto liquido negli ingredienti secchi e mescola dolcemente con una frusta fino a ottenere una pastella liscia e fluida (consistenza di panna liquida).

Lascia riposare la pastella a temperatura ambiente per 20-30 minuti: il glutine della farina si idrata e le crêpes diventeranno più elastiche.

Scalda una padella antiaderente (diametro 20 cm) su fuoco medio-alto e spruzza leggermente con olio di cocco.

Versa circa 40 ml di pastella al centro della padella e inclina subito la padella in modo che la pastella si distribuisca uniformemente sul fondo.

Cuoci per 2-3 minuti: quando il bordo inizia a staccarsi leggermente, capovolgi la crêpe con una spatola.

Cuoci l'altro lato per 1-2 minuti fino a doratura leggera.

Trasferisci la crêpe su un piatto e ripeti fino ad esaurimento della pastella.

Servi le crêpes calde o a temperatura ambiente: farciscile con ricotta magra e frutti di bosco, yogurt greco nature, o una vellutata di banana e cacao amaro a basso contenuto di zuccheri.
