Inizia preparando il ripieno: in una padella antiaderente, scalda un filo d'olio e aggiungi l'aglio tritato. Rosola per un paio di minuti.

Aggiungi gli spinaci freschi lavati e cuoci per circa 5 minuti fino a farli appassire. Regola di sale e pepe, quindi trasferisci in una ciotola e mescola con la ricotta leggera e il Parmigiano. Lascia raffreddare.

Per l'impasto, unisci in una ciotola la farina di mandorle, la ricotta, l'olio evo, l'acqua e un pizzico di sale. Mescola fino a ottenere un composto omogeneo.

Avvolgi l'impasto in pellicola trasparente e fai riposare in frigorifero per 10 minuti.

Stendi l'impasto tra due fogli di carta forno fino a ottenere un rettangolo di circa 15x10 cm.

Distribuisci il ripieno al centro, ripiega i lembi e sigilla bene i bordi.

Posiziona il croissant su una teglia rivestita di carta forno e spennellalo con un po' d'acqua e rosmarino secco.

Cuoci in forno preriscaldato a 200°C per 12-15 minuti, finché non risulta dorato.
