Preriscalda il forno a 180°C e rivesti uno stampo da 26 cm con carta forno bagnata e strizzata.

In una ciotola mescola la farina integrale, le mandorle macinate, il lievito e il sale.

Aggiungi l'olio di cocco sciolto a bagnomaria e lo zucchero di cocco grattugiato, mescolando fino a ottenere un impasto sabbioso.

Incorpora delicatamente gli albumi e la scorza di limone grattugiata, lavorando il meno possibile. Avvolgi la pasta nella pellicola e riposa in frigorifero per 30 minuti.

Affetta i cachi, passali al mixer con il cacao magro e il miele fino a ottenere una crema liscia. Aggiungi lo yogurt greco per rendere il composto più cremoso e leggero.

Stendi la pasta tra due fogli di carta forno con il matterello fino a 3 mm di spessore, creando un disco di 28 cm. Trasferiscila nello stampo preparato.
