Preriscaldare il forno a 180°C. Preparare uno stampo rettangolare (30x10 cm) con carta forno.

In una ciotola, unire farina integrale, ricotta magra, albumi, olio, acqua, sale e pepe. Impastare con una forchetta fino a ottenere un impasto omogeneo e compatto.

Trasferire l'impasto nello stampo e stenderlo uniformemente con le mani bagnate, creando una base di circa 5 mm e bordi leggermente rialzati.

Cuocere in forno a 180°C per 20 minuti. La base deve risultare leggermente dorata. Togliere e lasciar raffreddare completamente.

Nel frattempo, grattugiare finemente zucchine e carote con una grattugia manuale. Salare leggermente e far riposare 5 minuti, quindi spremere delicatamente con le mani per eliminare l'eccesso di liquido.

In una ciotola, mescolare ricotta magra, parmigiano, aglio tritato finemente, basilico fresco e pepe. Amalgamare bene.

Distribuire la crema di ricotta sulla base fredda in modo uniforme.

Disponere le verdure grattugiate sopra la crema, alternando zucchine e carote per effetto multicolore.

Completare la decorazione con i pomodorini ciliegia tagliati a metà.
