Method

Preriscalda il forno a 180°C. Tritare finemente 25 g di pistacchio con 15 g di mandorle fino a ottenere una granella omogenea.

In una ciotola, monta 1 albume con 5 g di eritritolo fino a ottenere un composto spumoso.

Incorpora delicatamente la miscela di pistacchio e mandorle all'albume, mescolando dal basso verso l'alto.

Versa il composto su una teglia rivestita di carta forno, formando uno strato di circa 1 cm. Cuoci in forno per 13-15 minuti, finché non è dorato. Lascia raffreddare completamente.

Per la crema, trita 25 g di pistacchio e amalgama con 120 g di yogurt greco e 2 g di eritritolo fino a ottenere una crema liscia.

Una volta fredda, dividi la dacquoise in due dischi sottili, farcisci con la crema al pistacchio e cospargi con 5 g di granella di pistacchio.
