Riscalda l'acqua tiepida in un pentolino; versala in una ciotola insieme al burro chiarificato e lo zucchero di canna, mescola fino a scioglimento.

Aggiungi la farina 00, i fiocchi d'avena a farina, la farina di ceci, la noce moscata, il lievito e il sale; impasta con le mani per 2-3 minuti fino a ottenere un impasto liscio e omogeneo.

Forma una palla, coprila con un canovaccio umido e lascia riposare 20 minuti a temperatura ambiente.

Dividi l'impasto in 12 porzioni uguali; arrotola ogni pezzo tra i palmi bagnati per formare bastoncini della lunghezza di 8-10 cm e dello spessore di una noce. Disponi su un piatto coperto con carta forno e lascia riposare 15 minuti.

Riscalda l'olio in una padella a fuoco medio-alto (raggiungere circa 170 °C); controlla la temperatura immergendo un pezzo di impasto: se sale subito in superficie e doratura, la temperatura è giusta.
