Method

Preparare la crema allo yogurt: in una ciotola mescolare yogurt greco, succo di limone, zenzero grattugiato, peperoncino, sale, pepe e aglio in polvere. Coprire e riporre in frigorifero.

Tritare finemente il merluzzo e il branzino con un coltello affilato fino a ottenere una consistenza granulosa omogenea.

In una ciotola, unire il pesce tritato con il pane integrale grattugiato, l'albume d'uovo, il prezzemolo, 5 ml di olio extravergine, 15 g di succo di limone, sale e pepe.

Mescolare delicatamente con una spatola fino a incorporare tutti gli ingredienti senza compattare eccessivamente.

Dividere l'impasto in 4 porzioni uguali (circa 100 g ciascuna) e formare 4 polpettone leggermente appiattiti di circa 10 cm di diametro.

Sistemare su un piatto, coprire con pellicola trasparente e refrigerare per almeno 15 minuti.

Scaldare una padella antiaderente a fuoco medio-alto e versare i restanti 5 ml di olio.

Cuocere i burger di pesce per 3-4 minuti per lato fino a doratura leggera, girando con cautela una sola volta.

Tostare leggermente le fette di pane integrale in tostapane o padella.

Assembrare i burger: posizionare il polpettone di pesce sul pane tostato, aggiungere foglie di lattuga e fettine di pomodoro fresco.

Guarnire con un cucchiaio della crema allo yogurt zenzero e servire immediato.
