Method

In una ciotola, unisci la farina di mandorle, il cacao amaro e l'eritritolo. Aggiungi l'olio di cocco sciolto e mescola bene. Pressa il composto in uno stampo monoporzione (7cm di diametro) e cuoci in forno preriscaldato a 180°C per 8 minuti fino a doratura leggera.

In un pentolino, riscalda il latte di cocco. In un'altra ciotola, monta il tuorlo d'uovo con l'eritritolo e l'amido di mais fino a ottenere una consistenza liscia.

Versa il latte caldo a filo sulla miscela di tuorlo, mescolando costantemente. Rimetti tutto nel pentolino a fuoco medio e cuoci per 3 minuti, mescolando finché non si addensa. Aggiungi l'estratto di vaniglia.

Versa la crema sulla base di mandorle già cotta.

Monta l'albume d'uovo con l'eritritolo fino a ottenere una meringa rigida e distribuiscila sopra la crema.

Cuoci in forno a 200°C per 4 minuti, finché la meringa non risulta dorata.
