In una ciotola, sciogliere il lievito nell'acqua tiepida e lasciare riposare 5 minuti.

Aggiungere la farina integrale, la farina di ceci, i fiocchi di avena e il carbone vegetale setacciati insieme; mescolare bene.

Incorporare il sale e impastare per 8-10 minuti fino a ottenere un impasto liscio e elastico, leggermente appiccicoso.

Trasferire in una ciotola leggermente unta, coprire con pellicola e far lievitare in luogo tiepido per 1 ora e 30 minuti, fino al raddoppio.

Preparare l'emulsione mescolando 12 g di olio extravergine di oliva con 6 g di acqua.

Stendere la carta forno su una placca da forno (35x25 cm circa) e ungere leggermente.
