Method

Mettere a bagno i fagioli bianchi secchi in acqua per almeno 8 ore. Scolarli e cuocerli in acqua salata per circa 40-45 minuti, finché non risultano teneri. Scolare e mettere da parte.

In una padella, scaldare l'olio extravergine d'oliva a fuoco medio e aggiungere l'aglio tritato, rosolandolo per un minuto.

Aggiungere i pomodori freschi a cubetti e cuocere per circa 5 minuti, mescolando di tanto in tanto.

Unire il tofu affumicato tagliato a dadini e i fagioli cotti, mescolando bene per amalgamare gli ingredienti.

Aggiungere l'aneto fresco tritato, sale e pepe a piacere e cuocere per ulteriori 5 minuti.

Servire caldo, decorando con una spolverata di aneto fresco.
