In una ciotola, unisci la salsa di soia, l'olio di sesamo, l'aglio e il pepe. Aggiungi il pollo, mescola bene e lascia marinare per almeno 15 minuti.

Porta a ebollizione una pentola d'acqua, aggiungi i noodles di patate dolci e cuoci per circa 5 minuti, poi scola e metti da parte.

In una padella antiaderente, scalda un filo d'olio e cuoci l'uovo sbattuto a fuoco medio, girandolo per creare una frittata sottile. Una volta cotta, ritirala e tagliala a strisce.

Sempre nella stessa padella, aggiungi un altro filo d'olio e fai rosolare la carota e la cipolla per 3-4 minuti, finché diventano tenere.

Aggiungi il pollo marinato e cuoci per 5-7 minuti, finché è ben cotto.

Unisci gli spinaci e i noodles, mescolando per amalgamare bene gli ingredienti. Cuoci per altri 2 minuti.

Infine, aggiungi le strisce di uovo e mescola delicatamente prima di servire.
