Method

Grattugia la scorza del limone su una tavola e pressala leggermente per liberare gli oli essenziali; tieni da parte.

Taglia il burro a dadini piccoli e lascialo a temperatura ambiente per 5 minuti.

In una pentola a bagnomaria (posiziona una ciotola resistente al calore su una pentola con acqua calda a 80-90°C), unisci i tuorli, l'uovo intero e lo zucchero di canna.

Monta leggermente con una frusta per 2-3 minuti finché la miscela non risulta pallida e spumosa.

Aggiungi il burro a dadini, il succo di limone fresco e la scorza grattugiata, continuando a mescolare costantemente per 8-10 minuti.

Quando la crema inizia a ispessirsi (raggiunge i 65-70°C al termometro), togli dal fuoco e incorpora delicatamente la proteine in polvere setacciata, mescolando con una spatola.

Ammorbidisci la gelatina in 30 ml di acqua fredda, quindi aggiungila alla crema tiepida e mescola fino a completo scioglimento.

Versa la crema in una ciotola, copri con pellicola trasparente a contatto con la superficie e immergi la ciotola in una bacinella con acqua fredda e ghiaccio per 15 minuti, mescolando ogni 5 minuti.

Trasferisci in frigorifero per almeno 3 ore prima di servire in una piccola tazza o su uno yogurt greco.
