Affettare finemente il manzo contro fibra e marinarlo per 10 minuti con salsa di soia, vinaigre di riso e amido di mais diluito.

Tagliare a grossi quadrati peperone rosso, verde, cipolla, funghi e carota in rettangoli.

Scaldare a fuoco vivo il wok con 5 ml di olio EVO, rosolare il manzo per 1 minuto fino al colore paglierino, poi toglierlo con lo schiumarolo.

Nel wok rimasto con 3 ml di olio, saltare verdure e peperoncino per 3-4 minuti mantenendo il crunch.

Riunire il manzo, versare la salsa preparata (salsa di soia, vinaigre di riso, amido e acqua) e mescolare fino addensamento (1-2 minuti).

Fuori dal fuoco, aggiungere 3 ml di olio di sesamo e servire subito.
