Sciogli il cioccolato fondente a bagnomaria e lascialo intiepidire.

Metti la gelatina in ammollo in acqua fredda per almeno 5 minuti.

Monta l'albume con l'eritritolo fino a ottenere picchi rigidi, per circa 3-4 minuti.

Scalda la gelatina strizzata con un cucchiaio d'acqua in un pentolino fino a scioglierla.

Unisci la gelatina al composto di albume, incorporando anche le proteine in polvere al cacao.

Versa metà del composto in uno stampo rivestito con il cioccolato fuso, quindi congela per 20 minuti.

Copri con il restante cioccolato fuso, aggiungi il composto rimanente e congela per un'altra ora.
