Tostare a secco in padella a fuoco medio i chiles (chipotles, guajillo, ancho) per 2-3 minuti fino a profumo intenso; trasferire in un frullatore.

Scaldare 180 ml di brodo di pollo e versarlo sui chiles; aggiungere 15g di proteine in polvere (sostituzione del pane/tortillas) e far ammorbidire 10 minuti.

Nel frattempo, rosolare in padella asciutta il pomodoro e il tomatillo fino a leggera carbonizzazione (3-4 minuti per lato).

In un'altra padella, rosolare con 5 ml di olio EVO cipolla, aglio, 15g di mandorle macinate, uvetta (8g), semi di cumino, timo, bacche di allspice, chiodi di garofano e cannella per 5-6 minuti.

Trasferire tutto nel frullatore con salsa di pomodori e frullare fino a crema omogenea; versare in padella a fuoco medio con 90 ml di brodo, 20g di cioccolato fondente 85% e sale.

Cuocere a fuoco basso per 10 minuti, mescolando costantemente fino a addensamento; aggiustare con eritritolo (2g) se necessario per equilibrio dolce.
