Preriscaldare il forno a 180°C e posizionare 12 pirottini di carta in una teglia per muffin.

In una ciotola, rompere finemente il cioccolato bianco con un coltello e mettere da parte (conserva circa 40 g per decorare).

In un'altra ciotola, mescolare farina di riso, amido di tapioca, polvere proteica, cocco, lievito e sale.

In una terza ciotola, sbattere le uova con il miele e l'estratto di vaniglia, aggiungere l'olio di cocco fuso e il latte di mandorla, mescolare bene.
