Method

Sciogli il lievito in 50ml di acqua tiepida con un cucchiaino di eritritolo e lascia riposare per 10 minuti fino a diventare cremoso.

In una ciotola, unisci l'olio, il sale, la farina di mandorle, i fiocchi di avena e le proteine in polvere, mescolando bene.

Aggiungi l'impasto di lievito al mix secco e amalgama fino a ottenere un composto omogeneo e elastico, lavorando a mano per circa 5 minuti.

Forma un panino cilindrico di circa 8cm e posizionalo su una teglia rivestita di carta forno. Copri con un panno umido e lascia lievitare in un luogo caldo per 30 minuti.

Preriscalda il forno a 180°C, spennella leggermente il panino con olio d'oliva e cuoci per 15 minuti fino a doratura.

Togli dal forno e lascia raffreddare leggermente prima di servire.
