Method

Immergere la gelatina in fogli in acqua fredda per 5 minuti fino a che risulti morbida; se utilizzi agar-agar, sciogli 1 cucchiaino in 30 ml di acqua tiepida e lascia riposare 2 minuti.

Riscaldare 200 ml di latte greco a bagnomaria (o in un pentolino a fuoco dolce) fino a quando inizia a formare piccoli vapori, senza bollire.

Strizzare bene la gelatina ammollata e aggiungerla al latte caldo, mescolando con una frusta fino a completa dissoluzione (circa 1 minuto).

Togliere dal fuoco e aggiungere le proteine in polvere, l'estratto di vaniglia e il miele; mescolare energicamente per 30 secondi per evitare grumi. Aggiungere i restanti 50 ml di latte greco freddo e mescolare.

Filtrare il composto attraverso un colino a maglie fini in una ciotola, per eliminare eventuali grumi.

Distribuire equamente in 4 bicchieri alti o coppette e riporre in frigorifero per almeno 2 ore fino a che la consistenza non sia stabile ma ancora cremosa.

Nel frattempo, preparare la salsa: lavare le fragole, tagliarle a metà e frullarle insieme al succo di arancia fresco e 4 foglie di basilico finché la miscela non diventa un coulis omogeneo.

Passare la salsa attraverso un setaccio fine per ottenere una consistenza liscia e raffinata.

Al momento di servire, versare il coulis di fragole e basilico sulla pannacotta, decorare con una foglia di basilico fresco e fragole a fettine sottili.
