Sciogliere il lievito in acqua tiepida con lo zucchero, attendere 5 minuti fino a ottenere una schiuma leggera.

In una ciotola capiente, mescolare le due farine e il sale. Versare il composto di lievito e impastare per 8-10 minuti fino a ottenere un impasto elastico e liscio.

Trasferire l'impasto in una ciotola unta leggermente di olio, coprire con un canovaccio umido e lasciare lievitare a temperatura ambiente per 90 minuti fino al raddoppio.

Nel frattempo, preparare il condimento: rosolare aglio e cipolla finemente tritati in una padella con 5 g di olio per 3 minuti a fuoco medio.

Aggiungere la passata di pomodoro, origano, basilico, sale e peperoncino. Cuocere a fuoco basso per 8 minuti, poi raffreddare.

Preriscaldare il forno a 220°C.

Stendere l'impasto lievitato in una teglia da pizza rettangolare (circa 30x20 cm) con i bordi alti, facendo risalire bene i lati con le dita. Lasciare riposare 10 minuti.

Bucherellare la superficie con una forchetta, escludendo i bordi. Cuocere in forno per 8 minuti.

Estrarre la pizza, distribuire la salsa di pomodoro, il formaggio spalmabile light in piccole porzioni, il tacchino affumicato strappato a mano, la mozzarella sbriciolata e il Parmigiano Reggiano.

Cuocere per ulteriori 18-20 minuti fino a che i bordi siano dorati e il formaggio fuso.

Estrarre dal forno, lasciare riposare 3 minuti, tagliare in 6 rettangoli e servire.
