Preparate l'impasto: immergete il pane integrale nel latte scremato, unite la carne macinata magra, l'uovo, lo scalogno tritato, prezzemolo e menta fresca. Salate e pepate, impastare bene e formare 4-5 polpettoni di circa 40g l'uno.

Fate rosolare i polpettoni in padella antiaderente con 2g di olio EVO per lato (2 min), poi riservate.

Nella stessa padella aggiungete 5g di olio EVO, soffritto la cipolla, unite le verdure tagliate a dadini (carota, zucchina, rapa), lasciate rosolare 3 min.

Versate i pomodori pelati, i ceci sgocciolati, il ras el hanout e 100ml di brodo vegetale. Portate a ebollizione, aggiungete i polpettoni, coprite e cuocete a fuoco medio per 15 min.

Nel frattempo versate il couscous in ciotola, coprite con 120ml di brodo bollente, lasciate assorbire 5 min coperto, poi mescolate con 3g di olio EVO.

Servite i polpettoni con la salsa e le verdure sopra il couscous.
