Inizia preparando il pesto: in un mixer, unisci i pinoli, il basilico, l'aglio e un pizzico di sale. Frulla aggiungendo l'olio extravergine d'oliva fino ad ottenere una crema omogenea.

Spalma il pesto ottenuto sul filetto di salmone su entrambi i lati e posizionalo su una teglia rivestita di carta forno.

Cuoci il salmone in forno preriscaldato a 200°C per 15-18 minuti.

Nel frattempo, porta a ebollizione dell'acqua salata e cuoci il cavolfiore per circa 5-6 minuti fino a quando non è tenero, quindi scolalo.

In una padella antiaderente, scalda un filo d'olio e aggiungi le zucchine tagliate a rondelle. Saltale per 4-5 minuti a fuoco medio, aggiustando di sale e pepe.
