In una padella, scalda l'olio extravergine d'oliva e fai soffriggere lo scalogno tritato fino a renderlo traslucido (circa 3 minuti). Aggiungi l'aglio schiacciato e cuoci per un altro minuto.

Aggiungi gli spinaci freschi e cuoci fino a farli appassire (circa 3 minuti). Condisci con sale e pepe a piacere e trasferisci il tutto in una ciotola.

Nella stessa padella, unisci le mandorle tritate e tosta leggermente per un paio di minuti.

Adagia il filetto di salmone su una teglia rivestita di carta forno e distribuisci sopra il composto di spinaci e scalogno.

Ricopri il salmone con le mandorle tostate, premendo leggermente per farle aderire.

Cuoci in forno preriscaldato a 200°C per circa 15 minuti, fino a quando il salmone è cotto e leggermente dorato.

Prepara una salsa mescolando lo yogurt greco con il succo di limone e un pizzico di pepe. Servi il salmone caldo con la salsa a lato.
