Method

Tritare finemente il dragoncello e il cerfoglio a mano e mettere da parte.

Passare al setaccio i pomodori pelati per ottenere una polpa omogenea.

Tritare finemente lo scalogno.

In un pentolino, versare l'aceto, aggiungere lo scalogno tritato e i gambi di dragoncello e cerfoglio (se disponibili). Portare a ebollizione a fuoco moderato e lasciar ridurre per 4-5 minuti fino a ottenere circa 15 ml di riduzione aromatica. Filtrare attraverso un colino fine, scartando le erbe e lo scalogno.

In una ciotola a bagnomaria (o con acqua calda, non bollente), montare dolcemente il tuorlo d'uovo con un cucchiaio di riduzione di aceto fino a ottenere una consistenza densa e pallida, per circa 2 minuti.

Aggiungere il burro a pezzetti piccoli al tuorlo, mescolando continuamente e delicatamente, per emulsionare.

Togliere dal fuoco e incorporare lo yogurt greco a temperature ambiente, mescolando bene per evitare grumi.

Aggiungere la polpa di pomodoro passata, il concentrato di pomodoro, le erbe tritate e il dragoncello tritato. Mescolare uniformemente.

Regolare di sale e pepe. Servire tiepida (ideale a 45-50°C) per mantenere la cremosità senza spezzare l'emulsione.
