Method

In una padella, scaldare l'olio EVO a fuoco medio e aggiungere la cipolla tritata, cuocendo per 1 minuto.

Unire l'aglio, il curry, lo zenzero, il cumino, il coriandolo, il peperoncino, i semi di sedano e la cannella, cuocendo per 1-2 minuti fino a che non sprigionano il loro aroma.

Aggiungere il cavolfiore e il tofu sbriciolato, rosolando per 3 minuti.

Versare il brodo vegetale e cuocere a fuoco medio-basso per 8-10 minuti, finché il liquido non si riduce quasi completamente. Aggiustare di sale e pepe.

In una ciotola, mescolare la farina di ceci, le proteine vegetali, il sale, l'olio EVO e l'acqua tiepida fino a ottenere un impasto malleabile.

Stendere l'impasto tra due fogli di carta forno creando un rettangolo sottile di circa 3 mm.

Tagliare l'impasto in dischi e riempire ciascun disco con 2-3 cucchiai di ripieno al centro.

Piegare a cono e sigillare i bordi con un po’ d’acqua.

Disporre le samosa su una teglia rivestita di carta forno, spennellare con un filo d'olio EVO e cuocere in forno a 200°C per 20-25 minuti fino a doratura.

Servire calde, accompagnate da una salsa leggera di yogurt greco e menta.
