Method

In una ciotola, mescolare il pane proteico integrale, la farina di cocco, il lievito, l'uovo, il latte di mandorla e il cardamomo fino a ottenere un impasto omogeneo.

Lavorare l'impasto per circa 3 minuti fino ad ottenere una consistenza elastica, quindi formare una palla e lasciarla riposare per 15 minuti.

Modellare l'impasto in una forma tonda e leggermente appiattita, disporlo su una teglia con carta forno e lasciarlo riposare per ulteriori 10 minuti.

Cuocere in forno preriscaldato a 200°C per 15 minuti fino a doratura. Lasciare raffreddare completamente.

Per il ripieno, frullare lo yogurt greco con la crema di mandorle e l'eritritolo fino ad ottenere una crema liscia.

Tagliare la parte superiore del panino, scavare un po' l'interno, riempirlo con la crema preparata, richiudere con la calotta e spolverare con un pizzico di eritritolo.
