Method

Scaldare 2g di olio EVO in padella a fuoco medio. Aggiungere la carne macinata (110g) e cuocere finché non rimane rosa, circa 5 minuti, sminuzzandola con un cucchiaio di legno.

Aggiungere cipolla (30g) e carota (25g) tritati finemente, cuocere 3-4 minuti fino a quando la cipolla diventa traslucida. Aggiungere aglio (1 spicchio) tritato, salvia e timo secchi, sale e pepe; cuocere 30 secondi fino a profumo.

Cospargere con 5g di farina di mandorle, mescolare e cuocere 1 minuto. Versare il brodo di manzo (100ml) mescolando costantemente per ottenere un sugo liscio. Aggiungere paste di pomodoro (15g), salsa Worcestershire (2ml) e senape di Digione (3g).

Aggiungere i piselli surgelati (40g) e il cavolfiore al vapore (80g) già preparato, tagliato a piccoli pezzi. Cuocere a fuoco lento 2-3 minuti fino a che il sugo si addensa.

Trasferire in una ciotola da forno, cospargere il cavolfiore rimasto (30g) grattugiato crudo con un pizzico di parmigiano (10g), e gratinare in forno a 200°C per 3-4 minuti fino a doratura leggera.

Completare con prezzemolo fresco tritato (5g) e servire caldo.
