Preriscalda il forno a 200°C. In una ciotola, mescola il cavolfiore con un cucchiaio di olio e un pizzico di sale. Distribuiscilo su una teglia e arrostiscilo per circa 20 minuti fino a doratura.

In una casseruola, scalda un filo d'olio e stufa la cipolla rossa tritata per 4 minuti. Aggiungi l'aglio schiacciato e cuoci per un altro minuto.

Unisci il curry e la curcuma, mescolando per 1-2 minuti per amalgamare i sapori.

Aggiungi il cavolfiore arrostito e i ceci, poi versa il brodo vegetale. Porta a ebollizione, quindi abbassa la fiamma e fai sobbollire per 10 minuti.

Frulla il tutto fino a ottenere una crema liscia, quindi incorpora lo yogurt greco. Regola di sale e pepe a piacere.
