Lavare e preparare le verdure: mondate le carote e tagliatele a bastoncini, le zucchine a mezzalune spesse, la mela a spicchi, i broccoli in cimette medie.

In una pentola a fuoco medio, fate imbiondire il porro tritato finemente con 8 ml di olio per 2 minuti.

Aggiungete i broccoli, 100 ml di brodo vegetale, sale e pepe; coprite e fate cuocere per 8 minuti a fuoco medio-basso, finché i broccoli risultano teneri.

In una padella antiaderente separate, scaldare 7 ml di olio e aggiungere carote e zucchine; cuocere a fuoco medio per 6 minuti, mescolando occasionalmente, per mantenerle leggermente al dente.

Aggiungere la mela alle verdure in padella e proseguire per 2 minuti; aggiustare di sale e pepe.

Nel frattempo, frullare i broccoli cotti con la ricotta, il Parmigiano Reggiano, la noce moscata e 100 ml di brodo vegetale fino a ottenere una crema omogenea e vellutata.

Trasferire la salsa in un piccolo pentolino e riscaldare a fuoco basso per 2 minuti, senza bollire.

Tritare finemente le noci e tostarle in padella asciutta per 1 minuto fino a profumo.

Distribuire le verdure croccanti nei piatti, versare la salsa di broccoli e cospargere con le noci tostate. Servire subito.
