Tagliare la melanzana a fette longitudinali e grigliarle su una piastra calda per 2-3 minuti per lato, fino a renderle morbide.

In una padella antiaderente, scaldare un filo d'olio e rosolare la cipolla tritata per 2 minuti. Aggiungere la zucchina e il peperone tagliati a cubetti e cuocere per ulteriori 3-4 minuti.

In una ciotola, mescolare la ricotta, l'uovo, il parmigiano, sale e pepe fino a ottenere un composto cremoso.

Unire le verdure cotte al composto di ricotta e mescolare bene.

Su una teglia, stendere una fetta di melanzana, spalmare metà del composto di ricotta, aggiungere i pomodorini tagliati a metà e coprire con l'altra metà del composto.

Chiudere con un'altra fetta di melanzana e infornare a 180°C per circa 20 minuti, fino a doratura.
