Method

In una pentola, portare a ebollizione 200 ml di brodo di pollo. Togliere dal fuoco e immergere i peperoni rossi secchi privati di semi e gambi; coprire e lasciare rinvenire per 10 minuti.

In una padella antiaderente, scaldare 1 cucchiaino d'olio e rosolare la cipolla e l'aglio fino a doratura (circa 5 minuti). Trasferire nel frullatore.

Aggiungere al frullatore il brodo con i peperoni, il pomodoro, l'aceto di mele, il cumino, l'origano, il pepe e un pizzico di sale; frullare fino a ottenere un composto omogeneo.

Condire il petto di pollo con sale e rosolare in padella antiaderente (3 minuti per lato).

Versare il composto di peperoni sul pollo, aggiungere la foglia di alloro e cuocere coperto a fuoco medio-basso per 20 minuti.

Sfilacciare il pollo direttamente nel brodo, rimuovere l'alloro, servire in una ciotola e guarnire con coriandolo fresco e spicchio di lime.
