Porta a ebollizione 150 ml di acqua con il bastoncino di cannella, i chiodi di garofano e il pizzico di anice. Copri e lascia in infusione per 10 minuti, poi filtra l'infuso.

In un tegame, sciogli 10 g di eritritolo con un goccio d'acqua a fuoco medio fino a ottenere un caramello leggero (circa 3-5 minuti) e versalo in una piccola teglia monoporzione.

Taglia il pane proteico in cubetti e mettilo in una ciotola, aggiungi l'infuso di spezie e il latte di mandorla, mescola e lascia riposare per 10 minuti.

In un'altra ciotola, sbatti l'uovo con 5 g di eritritolo, l'estratto di vaniglia e un pizzico di sale, quindi incorpora l'olio di cocco sciolto.

Unisci il composto di pane a quello d'uovo, mescola bene e trasferisci nella teglia preparata.

Cuoci in forno a 175°C a bagnomaria per 25 minuti, finché uno stuzzicadenti inserito al centro non esce pulito.
