Method

In una ciotola, riscaldare leggermente il latte scremato (circa 40°C), aggiungervi il lievito di birra, lo zafferano e mescolare fino a completa dissoluzione; lasciar riposare 5 minuti.

Montare leggermente l'uovo intero con gli albumi, poi versarli nel composto di latte e zafferano, amalgamando bene.

In una seconda ciotola, setacciare insieme farina integrale, proteine in polvere, sale e pepe.

Unire gli ingredienti umidi a quelli secchi e impastare energicamente per 8-10 minuti sino a ottenere un impasto liscio ed elastico; incorporare l'olio a filo durante l'impasto.

Trasferire l'impasto su un piano leggermente infarinato, compattarlo e formare una palla liscia.

Sistemare in una ciotola leggermente unta, coprire con un canovaccio umido e far lievitare in luogo tiepido per circa 90 minuti sino al raddoppio del volume.

Scaricare l'impasto, dargli forma di pagnotta compatta e sistemarlo su una placca rivestita di carta forno; praticare un'incisione a croce sulla superficie con un coltello affilato.

Coprire con il canovaccio e far lievitare ancora 45-50 minuti.

Preriscaldare il forno a 200°C.

Infornare il crostello per 20-25 minuti sino a doratura uniforme della superficie.

Sfornare e far raffreddare completamente su una gratella prima di tagliare in fette.
