Metti le lenticchie nere in una ciotola, coprile d'acqua e lasciale in ammollo per 1 ora. Scola e cuoci in 150ml di brodo vegetale con un pizzico di sale per circa 20 minuti, finché non sono tenere.

In una padella, scalda l'olio di cocco a fuoco medio; aggiungi i semi di cumino, il baccello di cardamomo, la stecca di cannella, la foglia di alloro e i chiodi di garofano. Fai rosolare per un minuto fino a quando gli aromi si sprigionano.

Riduci il fuoco e incorpora la pasta di zenzero fresco, la pasta d'aglio, la curcuma e il peperoncino in polvere. Mescola per 30 secondi.

Aggiungi la polpa di pomodoro e cuoci a fuoco medio per 5 minuti, mescolando di tanto in tanto. Aggiungi il coriandolo macinato e il burro chiarificato, mescolando fino a scioglimento.

Unisci le lenticchie cotte con il loro liquido alla salsa di pomodoro; porta a ebollizione e poi riduci il fuoco al minimo. Aggiungi il methi e copri, lasciando sobbollire per 15 minuti.
