Method

In una ciotola, schiaccia l'avocado e mescolalo con il pomodoro tritato, il succo di lime, il cumino e la paprika. Regola di sale e pepe.

In una padella antiaderente, scalda il pollo sminuzzato per qualche minuto, aggiungendo un pizzico di sale.

Riscalda la tortilla integrale in una padella per pochi secondi per ammorbidirla.

Posiziona il pollo al centro della tortilla, aggiungi un cucchiaio di formaggio fresco e un po' della salsa di avocado preparata.

Arrotola la tortilla, sigillando bene i bordi, e metti l'enchilada in una pirofila.

Copri con il resto della salsa di avocado e spolvera con il formaggio fresco rimanente.

Cuoci in forno preriscaldato a 180°C per 15 minuti, finché il formaggio non si scioglie e diventa dorato.
