Taglia il cavolo napa a pezzi di circa 2 cm e mettilo in una ciotola non metallica con il sale. Lascia riposare per 1 ora fino a quando il cavolo si ammorbidisce e rilascia liquidi. Sciacqua bene e scola.

In una ciotola, unisci il cavolo drenato con l'aglio, i cipollotti, il peperoncino in polvere e il tofu tagliato a cubetti.

Trasferisci il composto in un barattolo di vetro sterilizzato. Copri con carta cerata e un coperchio non ermetico. Fermenta a temperatura ambiente per 1-2 giorni (puoi anche consumarlo fresco).

Cuoci l'uovo in acqua bollente per 8 minuti, raffredda, sbuccia e affetta.

Servi il kimchi in una ciotola, guarnisci con le fette d'uovo e completa con lo yogurt greco e l'olio EVO.
