In una ciotola, marinare il petto di pollo tagliato a pezzi con il curry, la salsa di soia e un pizzico di sale per 10 minuti.

In una padella antiaderente, cuocere il pollo marinato a fuoco medio per circa 12 minuti, aggiungendo il latte di cocco negli ultimi 3 minuti.

In un'altra ciotola, unire le mandorle tritate, l'albume, l'eritritolo, i semi di chia e un pizzico di sale; mescolare fino ad ottenere un composto omogeneo.

Stendere il composto di mandorle su una teglia rivestita di carta forno, formando un disco sottile. Cuocere in forno a 180°C per 8-10 minuti fino a doratura.

Posizionare il pollo al centro della crosta di mandorle e ripiegare i bordi per sigillare il ripieno.

Rimettere in forno per altri 5 minuti per dorare ulteriormente.
