Method

Preparate il brodo: pelate cipolla, carota e zenzero. In una pentola versate 600 ml di brodo di manzo magro (da scatola, supermercato) e portate a bollore con anice stellato, chiodo di garofano, grains di coriandolo e pepe nero. Aggiungete 100 g di carne di manzo magra (filet o noce) tagliata a lamelle sottilissime, zenzero grattugiato (10 g) e 1 cucchiaio raso di salsa di soia. Lasciate cuocere 5-6 minuti a fuoco medio.

Nel frattempo, fate cuocere i vermicelli di riso (50 g secchi) in acqua bollente salata per 3 minuti, scolateli.

Risciacquate i germogli di soia (80 g). Lavate, snocciolate e affettate sottile il peperoncino fresco.

Disponete i vermicelli e i germogli in una ciotola ampia. Versate il brodo caldo con la carne.

Decorate con peperoncino, foglie di basilico thaï fresco e un goccio di limone. Servite subito.
