Sterilizza otto barattoli da 250 ml in acqua bollente per almeno 5 minuti e tieni pronti i coperchi nuovi.

Metti le cotogne in una pentola grande, aggiungi l'acqua e porta a ebollizione. Riduci poi il fuoco e lascia cuocere a fuoco lento coperto per 20 minuti.
