Condire il petto di pollo con sale, pepe e spezie.

Scaldare l'olio in una padella antiaderente a fuoco medio-alto e rosolare il pollo per 5-6 minuti per lato, poi rimuovere dalla padella.

Nello stesso fondo, aggiungere la cipolla e l'aglio, rosolare per 3 minuti.

Sfumare con il vino bianco, quindi aggiungere il brodo vegetale e la salsa di pomodoro.

Riportare il pollo nella padella con la foglia d'alloro e cuocere a fuoco basso per 30 minuti.

Sfilacciare il pollo nel sugo, aggiungere i peperoni, la paprica affumicata, capperi e olive; cuocere per altri 10 minuti.
