Method

In una padella antiaderente, scaldare due cucchiaini di olio EVO a fuoco medio. Aggiungere il pollo a cubetti, salare e pepare, e rosolare per circa 5-6 minuti fino a doratura.

In un pentolino separato, rosolare gli scalogni interi per 2 minuti, quindi aggiungere la cipolla tritata e l'aglio e cuocere per 1 minuto.

Incorporare il concentrato di pomodoro e tostare per 1 minuto.

Sfumare con l'aceto di vino rosso e il vino bianco secco, facendo ridurre di metà per 2-3 minuti.

Aggiungere il pollo rosolato al mix di scalogni, aromatizzare con cannella, pepe di Giamaica, chiodo di garofano, origano, alloro e rosmarino.
