Inizia preriscaldando il forno a 180°C e rivesti una teglia quadrata di 20x20 cm con carta da forno.

In una ciotola, sbatti le uova con l'eritritolo e l'estratto di vaniglia fino a ottenere un composto chiaro e spumoso.

Aggiungi lo yogurt greco e mescola bene.

Setaccia la farina di avena con il lievito e incorporala lentamente al composto, mescolando fino a ottenere una pastella omogenea.

Versa l'impasto nella teglia preparata e cuoci in forno per circa 25 minuti, o fino a quando un stecchino inserito al centro non esce pulito.
