In una casseruola, scalda il latte di mandorle con le foglie di menta per 5 minuti, poi filtra e lascia raffreddare.

In una ciotola, unisci il latte di mandorle infuso, lo yogurt greco, l'uovo, l'amido di mais e l'eritritolo e mescola bene.

Cuoci il composto a bagnomaria per circa 5 minuti fino a ottenere una crema densa.

In un'altra pentola, porta a ebollizione l'acqua con il burro di cocco e un pizzico di sale.

Aggiungi la farina di mandorle e il cacao, mescola fino a ottenere un impasto omogeneo e lascia raffreddare per 5 minuti.

Incorpora l'uovo all'impasto e mescola bene.

Trasferisci il composto in una sac à poche e forma 3 piccoli bignè su una teglia rivestita di carta da forno.

Cuoci in forno preriscaldato a 200°C per 15-20 minuti fino a doratura.
