Stendi la pasta brisée integrale in uno stampo per crostata da 24 cm precedentemente imburrato; bucherella il fondo con una forchetta e riponila in frigorifero per 15 minuti.

Mentre la pasta riposa, affetta finemente la cipolla e cuocila a fuoco medio-basso in una padella con 1 cucchiaio di olio per 5 minuti fino a renderla trasparente e dolce; aggiungi uno spicchio di aglio schiacciato negli ultimi 30 secondi.

In una ciotola, unisci la ricotta magra con le 2 uova intere, il Grana Padano grattugiato, sale, pepe e una pizzico di noce moscata; mescola fino a ottenere un composto omogeneo e cremoso.

Riprendi gli spinaci freschi, asciugali bene con carta assorbente e tritali grossolanamente; incorporali al composto di ricotta insieme alla cipolla caramellata.

Versa il ripieno sulla pasta brisée stesa nello stampo, livellando con una spatola.

Dimezza i pomodorini ciliegini, distribuiscili sulla superficie della quiche e condiscili con il restante cucchiaio di olio, sale e pepe.

Cuoci in forno statico a 200°C per 30-35 minuti, finché il ripieno risulta sodo al tatto e il bordo della pasta è dorato; una leggera ondulazione al centro è normale.

Estrai dal forno, fai riposare 5 minuti prima di servire tiepida o a temperatura ambiente.
